The unseasonable warm snap we experienced this week coupled with the certainty of much cooler weather this week forced me to do a little re-arranging to the menus. I’ve moved the Beef Veg soup that was planned for tonight to next week and we are having Soy Sauce & Brown Sugar Salmon with Quinoa, Mushrooms and Asparagus tonight instead.
I might mention here that the Asparagus I found on sale at my local supermarket this week was AMAZING! So tender and sweet! I’m hoping it’s still on sale as I am thinking it would be perfect for pickling later this week!
Now, on with the menu for the coming week:
Sunday is Family Funday Sunday. We’ll be taking the kids and grand kids to the new Museum in town and then out for dinner!
Monday: Mushroom Soup (came across a great managers special and got a bunch of mushrooms to use up!)
Tuesday: Pork Milanese and Salad
Wednesday: Mediterranean Sandwiches and Fries
Thursday: Beef Veggie Soup and Peanut Butter Sandwiches
Friday: Pork Schnitzel, Noodles, Oven Roasted Cabbage Wedges
Saturday: IMEA Concert for the boy. Dinner Out
Sunday: Marching Band Award Banquet
