WARNING: This post is not for the faint of heart, the dieting, or the health nut. There is nothing “good for you” about this sandwich, it’s just ALL GOOD!
This was a pinterest find created by a genius who goes by the moniker “BS in the Kitchen” and you can find the original recipe here!
I made these for my kids and I for lunch on Thursday! They are sinful and lovely and a HUGE hit that are already being requested again “so dad can taste them”. Yeah right! LOL! I do plan to make them again, but not too soon. Do have to be sensible about it! 🙂 It was super simple and so delicious! The only thing we would have done differently would have been to put another layer of potatoes on the other slice of bread with all of the wonderful ingredients in between!
Here’s the basic rundown:
Cook your bacon to your liking about 2 slices per sandwich
Slice a potato into thin slices and fry them in a skillet with some vegetable or olive oil
Butter the outsides of your bread (we used a lovely sliced ciabatta bread)
Spread some sour cream on the inside of your bread slices (we used fat free in an effort to make it better for us. Yeah right!)
Place slices of sharp cheddar cheese on both slices of bread
Place about 5 slices of potatoes on one slice of bread. (Here’s where we would make the only change. We think there should be twice the potato-ee goodness in this sandwich and next time will put 5 slices of potatoes on EACH slice of bread.)
Spread a little more sour cream on top of the potatoes
Sprinkle some chopped scallions or chives on top of that and the bacon on top of that.
Put your sandwich together and grill it up in a pan or a griddle.
That’s it! Just slice it in half and enjoy! So glad I found this recipe. We’re thinking it might be a good compliment to Tomato Soup. Or maybe that should be the other way around.
