What’s On Momma T’s Table The Week of 2/17/2013

What a week it’s been! This virus has run it’s way through the family now, leaving the dear hubs on KP duty for longer than either of us expected! But he was quite the trooper and kept things running smoothly. I couldn’t be more grateful for his help or for the clean kitchen I “came back” to. He really hit this one out of the park for me! Here are a just 3 of the meals he created for us this week:

Salmon Patties and Baked Potato. (Kids, he actually went on Pinterest to find a recipe for this!)

Pancakes and Bacon. He made this special heart-shaped one just for me. ❤

On Monday night his own creation of bacon, mushrooms and asparagus with pasta.

He also made dinner Tuesday and Wednesday. I’ve appreciated his help a lot.

Up until Thursday I hadn’t had the energy or appetite to do much more for lunches than to warm up soup or have a lime popcicle. But Thursday, my appetite was back and I whipped up this yummy dish!

Baked Sweet Potato, with Sauteed Asparagus, and Feta Cheese, Grapes and Homemade Apple Sauce and a Wedge Salad.

I followed it up with a one of the chocolate chip cookies left over from the ones the girl made for her Valentine and a cold glass of milk. Yes! It is good to be back among the living! 🙂

Unfortunately the creepin’ crud has crept over to my oldest son’s apartment and he is now down with it. This means that our shared birthday will have to be celebrated next Sunday instead of this Sunday. 😦

Fortunately (silver lining to every situation right?) we are going to make another attempt to get together with number 2 son and his family and make Egg Rolls this weekend! I’m hoping that we can at least accomplish this.

So, without further ado, let’s take a look at what’s on Momma T’s Table this week!

LUNCHES:

Monday – Kids are home so we’re going to make some French Bread Pizzas!

Tuesday – Guacamole Grilled Cheese; Veggies with Hummus and Peaches

Wednesday – Hard Boiled Egg and Cheese Sandwich, Cottage Cheese, Fruit and Iced Tea

Thursday – Greek Pasta Salad with Berries and Milk

Friday – Flat Bread Chicken and Veggie Pizza and Tea

DINNERS:

Sunday – Egg Roll Extravaganza and Chinese Take Out

Monday – Honey Lime Chicken Enchiladas

Tuesday – Meatball Subs and Salad

Wednesday – Salmon and Creamy Orzo with Asparagus

Thursday – Goulash and Salad

Friday – Maple Dijon Chicken, Baked Potatoes and Green Beans

Saturday – Date Night

Sunday – Birthday Celebration! Pizza and Desserts!

Also excited to be starting seeds for the garden this week and FINALLY canning the Kraut too! Looking forward to a better week! Hope you all have a wonderful week too!
