My apologies for the tardiness of my post. I hope too many of you didn’t go hungry! LOL! We had quite the weekend, then I had to work outside of the home Monday so I’m running behind.
Our weekend was wonderful. The fundraiser went very well and Family Funday Sunday was AWESOME at the zoo with our whole family. The twin grandbabies were pointing and full of ooohs and ahhhs! A day I’ll cherish for a long time. Unfortunately it was too cool and windy for a picnic lunch so we went for soups and sandwiches at Panera. YUM!
This week we are hectic so my selections have quick turn around and little prep. We’re hatching chicks for our 4-H Cloverbud group and hatching began today! This means little visitors coming and going to watch the miracle of the hatching and to see the soft, downy chicks! We’ve set 15 eggs so it will be interesting to see how many we get! I plan to do a post on it toward the end of the week.
Speaking of the end of the week, we’ve got prom happening around here this week too! Not as hectic as it’s our son. Tux has only to be picked up. Shower, dress and go, but still a lot of fun!
So, without further ado, here’s what’s on Momma T’s Table this week!
Monday – Work Lunch: Pearl Cous salad with Tuna, frozen peas, scallions, spinach and feta cheese with grapes and a sliced kiwi. I got up and made it in the morning (only because I didn’t think to do it the night before) but it was easy enough.
Tuesday – Testing at the high school today means a half-day, which means hungry kids will be hitting my house for lunch. Because the Boy did not give me much notice (After dinner last night: “Oh by the way, there’s a bunch of people coming over for lunch tomorrow.”) So, frozen pizza and pizza rolls it is! For them. For me, a chicken tostada made with left over grilled chicken from last night’s dinner.
Wednesday – Guacamole Grilled Cheese
Thursday – Ploughman’s Lunch – Hard Boiled Egg, Salami and Cheese, Bread with Olive oil, Kiwi, and Almonds
Friday – Pasta with Chicken and Peas
Monday – Grilled Tequila Lime Chicken, Fried potatoes made from left over boiled potatoes, Green Beans, Peaches
Tuesday – Beef and Noodle Casserole
Wednesday – Sopas with Beans and Queso Fresco and Fruit Salad
Thursday – Grilled Honey Lime Chicken Skewers, Wild Rice, Marinated Grilled Mushrooms, Cottage Cheese
Friday – General Tsao’s Chicken and Pot Stickers
Saturday – Out
Sunday – Grilled Sausage, Onions and Mushrooms over noodles
