What’s On Momma T’s Table the Week of 2/22/15

We’ve had a busy week around here, but what else is new! The kids are busy as always, The Girl continues to make strides on her college applications, FAFSA and the like. The Boy is in production of his play “The Elephant’s Grave Yard” which opened Friday night. It has been a long time since we’ve had everyone at the table at the table for a meal. It was such a pleasure to have all of us together for lunch today! I enjoy getting to talk to everyone at once. It gives us a chance to get some planning done too. The coming week will bring The Boy back to a more normal schedule, and we will all enjoy dinners together again. I’m grateful for these moments as I know that they will change more and more as they get older. Having them gone from the table every day will probably be the hardest part of having them leave home for me.

We’ve seen a bit of spring around here this week. Not in the weather by any means…brrr…but some of my seedlings have already started to emerge! I started some more seeds today too, peppers of all sorts. It may be odd, but the starting of the seeds and tending to them brings me some sort of peace to my soul. I almost wish there was more to it than planting the seeds, watering and waiting. Well, I do talk to them…a couple of times a day maybe.

This weekend we started in earnest on our Kitchen re-remodel. We started the remodel 15 years ago when the oldest boy graduated 8th grade and now, we’re hoping to get it done, or at the very least painted, by the time The Girl graduates from high school this spring. As we must name every project we get into, we have dubbed this one “Operation What Have We Gotten Ourselves Into…Again?”

To help get us down the road, The Hubs took Friday and Monday off of work this weekend to get things perking along so that I might be able to move along during the week with cleaning, prepping and painting. We are also adding more upper cabinets. We had wanted to go all the way up to the ceiling with them 15 years ago when we first bought them, but the budget at that point didn’t allow. Since we have decided to give the cabinets a face lift with paint, we went to the local Builder’s Warehouse and purchased some basic unfinished 15″ cabinets to put in the space above the cabinets. This will leave some spaces in the corners, but we’ve got plans for that too! 🙂

The microwave over the stove has come out too. That’s right, we’re living without a microwave! Daring aren’t we? There are many more changes to come, but more on all of that in a later post.

I’ve not managed to get menus up for a couple of weeks. Sorry. While I’ve had them done each week, I just haven’t had time to write them out for you. I still find it funny that these posts of what we are planning on eating each week are of interest to anyone but me, but many of you tell me that you enjoy them and that they help foster ideas for your own meals so, without further ado here’s what’s on Momma T’s table this week:


Sunday – Biscuits and Gravy

Monday – Omelettes

Tuesday – Toast with Almond Butter

Wednesday – Egg Sandwich

Thursday – Cream of Wheat

Friday – Poached Eggs and Toast

Saturday – French Toast


Sunday – Grab and growl…I figure after biscuits and gravy, no one is going to do much more than munch anyway.

Monday – Leftover Salmon with greens

Tuesday – Apple, Cheddar Grilled Cheese on 12-grain bread

Wednesday – Tuna Melt and Fruit

Thursday – Leftover Beef Stew

Friday – Baked Sweet Potato with Asparagus, Roasted Tomatoes, Feta and Capers

Saturday – Gidget lunch!


Sunday – Asian Salmon with Rice Noodles and Asparagus

Monday – Salisbury Steak Meatballs over Egg Noodles and Salad

Tuesday – Baked Parmesan Chicken with Veggies

Wednesday – Beef Stew

Thursday – Balsamic Chicken and Vegetables

Friday – Chicken Noodle Soup a la The Hubs!

Saturday – OUT!
